Corn Cashew Stir Fry
A little chef inspired this dish which I lapped up in no time. I hope all of you are coping well with the changes life has thrown at all of us out of nowhere...

This is a very simple one pot recipe with plenty of scope to bring in variations....
Ingredients
1 cup fresh corn kernels
1 onion thinly sliced
1/2 cup shredded cabbage
1 tomato julienned
1 tspn ginger garlic crush
1 tspn black pepper crushed
2 tbsp cashew nuts
1 tspn soy sauce
1 tspn vinegar
1 tbsp tomato ketchup
1 tspn honey
1 green chilly finely chopped (optional)
Oil to fry
salt to taste
Method
1) In a wide bottom pan, heat oil. Keep the flame high
2) Add the onions, tomatoes, cabbage and saute on high flame to evaporate some water
3) Add the ginger garlic crush, salt, pepper and cashews
4) Add the corn kernels and continue sauteing
5) Next add soy sauce, vinegar and honey.
6) Finally add tomato ketch up and give a good stir
7) Garnish with fresh coriander or onion greens optionally and serve hot.
