Quesadillas
It wont be wrong to say that I picked mexican cuisine for this recipe starting with Q. It fitted well for 2 reasons, I always have 2 reasons - like Amitabh Bachhan had in one of his old classics..:D, one for it starts with Q for a cuisine I wanted to try and second because I do not have the recipe for a quesadilla on my blog yet...
It was just the right thing to do....now essentially quesadillas are toasted sandwiches made using flour tortiallas stuffed with the most amazing filling and cheeses.
I made a vegetarian version of this using whole wheat flour tortillas. Also, since I made the tortillas from scratch, I made mini version of it
Ingredients
4 flour tortillas (replace the corn meal with whole wheat flour)
for stuffing
1 red bell pepper juliennes
1 green bell pepper juliennes
1 onion julienned
2 tomatoes deseeded and juliennes
1 zucchini cut into thin slices of 3 inch each
2 jalapeno peppers (pickled)
1 cup button mushrooms (optional/ you can use shredded cooked chicken)
1 cup Cheese (Cheddar/montery jack cheddar etc)
2 tbsp Tomato sauce
1 tspn Tobasco sauce
1 tspn red chilly powder
salt to taste
Oil to cook
Method
1) In a pan, heat the oil, add the onions and let them sweat. Reduce the flame and let it caramelise a bit, about 5 min
2) Add the rest of the veggies one at a time on high flame
3) Add the jalapeno peppers and the tomato and tobasco sauce. Season with salt and red chilly powder.
4) Now on a baking sheet lay 2 tortillas.
5) Now make 2 layers each of vegetable mixture and grated cheese
6) Cover with the remaining 2 tortillas.
7) Bake this for 10-15 min at 170c. Do not wait for the tortillas to be too crisp.
8) As soon as the cheese melts, remove and cut wedges using pizza cutter
Serve with tomato salsa or sour curd.
