Orange Sauce/ Mexican Orange Brocolli
And now we go to the south again this time American southern side - Mexico. I have been fascinated by their food for many years - what distinguishes this food in Indian restaurants is the corn, red kidney beans, smoked paprikas, smoked bell peppers etc. But really it is also about the way these same vegetables are cooked in different countries that makes it different
So while I have made recipes from Mexico, coming around and studying the cuisine all over again, mainly for the research which involved finding recipes that fit a menu in sequential order for the alphabets...phew!
So when I made the dish with P, I had to also make a side dish with it , ofcourse that starts with O...
Now before I drain through that episode, let me talk about this sauce or curry as you may prefer to say...this though is a sauce to be served with grilled chicken or rice or vegetables, personally I think it would also taste yummy with fried noodles. So when I make that version, I will register it as Mexican chopsuey or even better Mumbai's mexican chopsuey...

Ingredients
1 cup mixed vegetables - Brocolli, Cauliflower, Carrots, Capsicum
2 tbsp APF
1 tspn garlic paste
1 tspn ginger paste
1 onion finely chopped
1 litre Orange juice
1 tspn all spice powder
1 tspn black pepper
1 tspn sugar (optional)
2 tbsp Butter
Method
1) Steam the vegetables in salted water and set aside. Alternately you can also deep dry them after dipping into seasoned flour batter
2) In another pan, heat some oil or butter.Add the ginger and garlic paste and saute for 2-3 min
3) Add the onions and saute it until pale in color. Next Add the APF and saute it until it is cooked. Now remove the pan off the flame and add the orange juice gradually while stirring to dissolve the flour in it
4) Let it cook until the sauce thickens and coats the back of the spoon.
5) Add the allspice, black pepper powder, salt and let it simmer
6) Add the cooked vegetables and serve hot with rice or chicken
