Vadai Curry

Certain dishes just happen to you destiny ..When I read about this combo, I realised that while I make curries and dosas and vadas it never occurred to be a breakfast combo.
But then it is modern breakfast and it surely has missed me...well i missed it but not anymore...we loved it for dinner, but I will try this next time I visit chennai to confirm that mine tasted authentic.
For now, enjoy this buffet on the table from down south

for vadai
2 cups split bengal gram (soaked for 4 hours)
1 tspn fennel seeds
2 tspn coriander powder
1 tspn cumin seeds powder
2 sprigs of curry leaves
2-3 red chillies
salt to taste
Oil to deep fry

for curry
1 onion finely chopped
2 tomatoes finely chopped
1 star anise
1 tspn red chilli powder
1 tspn cumin seeds powder
1 green chilly roughly chopped
2 tspn oil
salt to taste

1) Soak the dal for 4 hours. After that, grind it to a coarse batter along with rest of the ingredients except salt and oil. Use water only if absolutely needed. Add using spoon as required

2) Heat oil in a deep frying pan until it is very hot
3)  Using a spoon drop small portions of the batter in to the oil. Put the flame on low medium heat and let it cook till they are golden brown and crispy
4) Remove the vadas and drop them in water. Let them stand for 10 min or so
5) In another pan, heat some oil, add the cumin seeds, star anise and green chillies. Let it splutter a bit.

6) Next add the onions and saute it. Add the tomatoes and let them cook until they are slightly cooked
7) Transfer to a mixie and grind this when it has slightly cooled down. Make a puree
8) In the pan, add the remaining oil, add curry leaves and red chilli . Add the puree and red chilli powder and salt.
9) Add more water to make gravy like consistency. Let it cook until the tomatoes are fully cooked
10) Add the cooked vadas and remove from gas

Serve this garnished with fresh coriander along with set dosa.

We make tangy gravy curry (pulusu) with moong dal vada. Even this looks tasty

nevertheless, this is something on my to-do list.. I know of someone in my family who makes extra medu vadas specially to make vada curry !! well done :)
