Instant Cucumber Pickle/ Cucumber Pickle


Pickling few vegetables comes in handy when you have tiffins to pack Indian sandwiches - the popular and standard street food variety does not use any pickled vegetables, because most of the vegetables are available round the year.

With the augment of international subs in the market, pickling cucumber and jalapenos has become a norm..

Personally me and DH like the tang it adds to the sandwich. This one is a very easy recipe and no fail as well. You can try with any variety of vegetables. For this week's condiments theme for buffet on the table...I bring this simple recipe..



Ingredients
2 cups thinly sliced green cucumber
1 cup water
1 cup white wine vinegar
1 tspn salt
1 tspn bay leaf
Method
1) In a pan, add the water, white wine vinegar , salt and bay leaf. Let is boil for 5-10 min
2) Add the chopped cucumber. Let it cook for 3-5 min. Switch off the flame and let it stand till it comes down to room temperature.
3) Store in a sterilised jar.

Use as required...to stuff your sandwiches and burgers.

cucumbers are the classic pickled veg condiment you get here whenever you order sandwiches - I have never been a big pickle fan because of the strong vinegar tang but I am starting to like them a bit more recently. Yours look perfect
