Bircher's Muesli
Most restaurants serve this in their breakfast buffets in Europe. If I had to rely on the taste from these hotels, I would have turned down this wonderfully healthy recipe long back. Most hotels have one corner reserved for a lumpy looking oats based recipe mixed with soured yogurt at the last moment. But to my luck I tasted the real authentic- mom made recipe at someone's home.
Traditionally this is made with hand rolled oats mixed with sweeteners - natural juices and left overnight. Next morning it is mixed with more real goodness of fruits and dairy of choice. The main ingredients to lift the taste is fershly grated apple.
Apparently it originated i Swiss, by a gentleman named Bircher. If you stick to oats, grated apple and one dairy food, you have the authentic recipe. All other things are optional and primarily to be added as per taste.
Ingredients
1 cup oats (rolled)
1 cup apple juice
2 tbsp mixed dry fruits
1/2 cup milk
1 Apple grated
2 tbsp corn flakes
1 tbsp thick yogurt
Method
1) Soak the oats and dried fruits in Apple juice - overnight preferably
2) Next morning, add the corn flakes, milk and more dry fruits.
3) Just before serving add the yogurt and grated apple
