Turkish Pogaco
So once in a while you need to experiment with the look of your bread and create something nice. I made this pogaco one lazy afternoon. I liked its beautiful look and my family loved its taste. My inlaws (MIL and FIL) who are not huge fans of pizza in particular, also liked it. This was a simple recipe to put together because I had 2 major things handy- one the pizza dough and other the pizza sauce from previous night pizza dinner. So pulling this up was not a major task.
Ingredients
For the dough
2 cups APF/ Maida
2 tbsp Olive Oil
1.5 tspn instant yeast
2 tbsp sugar
a pinch of salt
3/4 cup warm water
For the filling
1 finely chopped red pepper
1finely chopped green pepper
1finely chopped green zucchini
1 finely chopped brocolli
2 cups pizza sauce (of your choice)
3 tbsp grated parmesan
1 tspn black pepper
1 tspn mixed italian herbs (optional)
salt to taste
Method
1) In a basin mix the dough ingredients and make a soft dough. Cover and set aside for 20-40 min
2) In another bowl mix the fillings ingredients and stir well
3) Now make 5 -6 small balls of the dough. Roll each one flat into about 4 inch disc. Place them flat
4) Now prepare a baking tin or pan or your choice. I use tin as it gives a nice crust at the base
5) Now give 4 small cuts to form a shape as shown below

6) Now mix a little sauce with the filling ingredients to make a nice creamy mixture
7) Now place a spoonful or as much as it can hold, mixture in the centre. Brush the flaps with some sauce
8) Now lift one flap and cup the filling from both sides. press the ends at the opposite ends to cover the base. Next lift the diagonally opposite flap and repeat
9) Next repeat the same for the other two flaps. The first parcel/ pogaca is ready.
10) Place the parcel in your greased baking tin.
11) Similarly repeat for the rest and fill up the tin.
12) Now bake for 15 min at 200 c in a preheated oven
