Marble Cake
Chocolate is fun to use in baking but the quality of your chocolate ingredients determine outcome of your dish. The marble cake recipe is not very unusual as such but the fact that for me it works only when I use either eggs or condensed milk. I am slightly disappointed with the results I got using curd. It could be because I used home made curd which is very watery
Ingredients
2 cups APF
1 1/4 cup Castor Sugar
200 gms condensed milk
2 tbsp cocoa powder
2 tbsp milk
1 1/4 cup butter
1 tspn vanilla extract
1 tspn baking powder
1/8 tspn baking soda
Method
1) Cream the butter and sugar until it is light and airy
2) Add the condensed milk, vanilla extract and beat again
3) In another bowl, mix the APF with baking powder and soda and set aside.
4) Add the flour mixture to the butter mixture and mix gradually using a spatula.
5) Remove about half of the batter in another bowl. Add the cocoa powder and milk and mix it well
6) Use the round baking tin of 8 inch size. Grease the base and dust with some flour
7) Now using 2 spoons of same size, add one spoon of white batter in the centre of the tin. Next top one spoon of cocoa batter. Alternately repeat until you use one batter. When you keep the tin tilted with a couple of coins beneath one side, you will get the shape I got, offcentre pattern.
You may create swirls or pattern using toothpick etc.
8) Bake in a preheated oven for 20 min at 180c Check the centre with a tooth pick or knife. If it comes out clean you can remove and let it cool down
I topped it with chocolate ganache as this was a gift to my neighbour's daughter on her birthday
