Basundi Cake
My experiments with ingredients continues to fetch me new recipes. While I have always loved the mawa cake that I buy from parsi bakery shops, the magic of it eludes me when I try to make it at home. I have recieved good appreciation no doubt but nothing that personally satisfied me.
This recipe with basundi although I loved when I made it. It is so simple to make. You need to try this..
Ingredients
1 cup all purpose flour/ maida
1 cup basundi / sweet evaporated milk
1 cup butter
1/2 cup sugar
2 tbsp corn flour
1 tspn elaichi powder/ cardamom essence/ powder
1 tspn baking powder
1 pinch of baking soda
Method
1) Mix the sugar, butter and cream it together
2) Add the basundi, cornflour and cardamom powder together and mix well
3) In another bowl mix the flour,baking soda and baking powder. Sift it well
4) Now add the flour mixture one spoon at a time to the basundi mixture
5) Pour this batter into lined muffin tray
6) Bake for 15 min or until the cakes are cooked in the centre at 180c
Let them stand for few minutes and watch them disappear
