Zucchini Kebabs/ Turkish Zucchini Fritters

These are consumed as kebabs and are not baked or made in tandoor. They taste amazing




Ingredients
2 Zucchinis grated
2 medium onions finely chopped
1 cup white cheese grated
1/2 cup fresh coriander
1 tspn dry mint/ 1 tbsp fresh chopped mint
1 tspn dill chopped (optional)
1 tbsp parsley (optional)
1 teaspoon salt
1 teaspoon black pepper
for batter
2 tbsp flour
1 tspn corn starch / 1 egg


Oil for deep frying


Method
1) Prepare the batter by mixing flour, corn starch a pinch of salt and some water if required. Mix and set aside
2) Mix the zucchini with the salt and knead it to extract the excess water. Squeeze as much as you can.
3) Add the rest of the ingredients and mix well. Try to make small balls of flat tikkis.
4) Dip them in the flour batter and deep fry in hot oil

Serve with chutneys of sauce. This tastes amazing on its own

I need to try these kebabs.
Zucchini lends itself so well to these savory dishes. Nice one.

I rarely get this veggie here but if I find them the next time I visit the market, I will be making this for sure...
