Yemeni Hulba/ Yemeni Dip/ Yemeni Fenugreek Dip

Hulba is a part of the Yemeni culture and although it sounds simple from the ingredients any wrong step would lead to a bitter tasting dip.

Alternatively carefully following the steps would mean a a beautiful dip to assort your breads or stews

Ingredients
2 tbsp finely ground fenugreek powder
1 cup water
salt to taste
1 tbsp lemon juice
1 tomato pureed
1 tspn crushed garlic
1 tspn green chillies
Method
1) Soak the fenugreek powder in 1 cup water for few hours.
2) Drain the water. The powder will become paste by now.
3) Using a fork beat it for almost 10 min. You may use a electric beater. The end product will be very light , fluffy and frothy
4) You can now add the rest of the ingredients

You can use it as a condiment or add it as a topping on stews
