Yemeni Dabeekh/ Tabeekh/ Vegetable stew

Yemeni Dabeekh is a simple vegetable stew that can be turned into a delicacy by topping it with hulba or bisbas. I was a little weary about trying it out with the topping but I tested a small portion. It is full of flavors and the hulba which is made of fenugreek does not taste bitter or odd as I had expected it to be.



Ingredients
3 potatoes, peeled and cubed
1 medium green capsicum, stem and membranes removed and cubed
1 onion chopped
2 tomatoes, roughly chopped
1 tspn green chillies
1 tspn coriander powder
1 tspn cumin seeds
1 tspn black pepper powder
1 tspn crushed garlic
salt to taste
1 tspn Oil 

Method
1) In pan, heat some oil, add the crushed garlic, onion and saute until it sweats
2) Now add the coriander, cumin, pepper , tomatoes and salt. Cook until the tomatoes become pulpy
3) Next add potatoes, capsicum and saute for a minute. Add a cup of water and cover with a lid
4) After 10 min or so uncover, if the potatoes are cooked

Serve now or top with Hulba served on top

To serve Hulba, prepare it as per the instructions here

1) When the dabeekh is cooked, lightly mash it using a fork, add more water.
2) Let it come to running boil. Now pour the Hulba to cover the top. I put only a little to test

After 3 to 4 min, switch off the flame and serve with rice or yemeni roti Khobz Al Tawa

I nice to know hubla enhanced the flavor. The stew looks a lot like our curries
One can never go wrong with potatoes whatever cuisine it might be. Good stew.
