Soba Noodles Stir Fried in Honey Ginger Sauce

It has become pretty easy to find the international ingredients in vicinity. In Mumbai, Powai is a landmark for finding  the Japanese products. It may be owing to the many expats residing there...I often pick the Japanese cake from Bread Talk, and the asian grocery from Nature's Basket

I picked the Soba / Buckwheat noodles a few times and tried a few cold recipes. This time around as part of the Japanese meal I decided to make the Soba Noodles in japanese style ginger sauce



Ingredients
1 Packet Soba Noodles/ You may use regular wheat noodles
1 cup spring onions finely chopped
1 capsicum chopped (I mixed green and yellow)
2 tbsp finely chopped fresh ginger 
2 tspn Sesame Oil/ Vegetable Oil
1 tbsp Soy Sauce
1 tbsp Honey
2 tspn White vinegar
1 chopped green chillies
salt and black pepper to taste

Method
1) Cook the noodles as per the instructions. Add them to  cups boiling water and cook for 10 to 12 min
2) In another bowl, mix all the other ingredients except oil and capsicum. Mix it well.
3) In a pan, heat the oil and add the capsicum,. Saute it until well cooked
4) Add the prepared sauce and let it simmer.
5) Toss in the cooked noodles 

Serve hot or cold

Soba noodles are one of our favorites too. You have a really nice sauce. Turned out great!

I was never a big fan of cold noodles but have started to like them. I guess it all depends on the sauce that goes on it. Soba noodles in honey ginger sounds good.
