Sago Pudding /Malaysian Sago pudding

Sago Pudding is a simple dish which I have made eggless but nothing less in flavor


Ingredients
1 cup Sago pearls/ sabudana
1 cup coconut milk
1/2 cup palm sugar / palm jaggery
1/2 cup water
1 tspn corn starch mixed with 2 tspn water
Method
1) Mix the palm jaggery and water and melt it in a pan over low heat until it comes to a boil
2) Add a cup of water to the sago pearls and cook them over low medium heat until they become translucent, remove excess water
3) add the corn starch and stir in until it comes together. Pour this mixture into serving bowl or individual moulds and let it stand for few minutes
4) To serve, take a slice of sago pudding, pour the palm syrup and coconut milk on top and serve.

Vey similar to the sabudana kheer my mother used to make. The coconut milk and palm sugar must add great flavor. Lovely dessert
