Pineapple Chutney

I felt like, while searching for water in a desert I spotted an ice cream shop when I found this recipe under Zambian collections.

This one is an exotic chutney or relish to go as a dip for finger foods.







Ingredients
1 cup fresh pineapple chopped 
1 onion finely chopped
2 tomatoes finely chopped
1 capsicum finely chopped (deseeded and membranes removed)
1 tbsp lemon juice
1 orange pulp
1 orange zest
1 lemon zest
1 tbsp black raisins
4 tspn sugar
1/2 cup white vinegar (optional if you dont plan to store)
1 tbsp candied ginger/ aalepak
salt to taste
Method
1) In a large non stick pan, add all the above ingredients and let it cook on low heat for half an hour
2) If the mixture dries up before it turns pulpy then add a cup of orange or pineapple juice

When done, let it cool down and then store in sterilised jar. This should stay well for a few months in refrigerator

The list of ingredients sounds so good! All this flavors together should taste heavenly. Truly great find.
I love the ingredients in this recipe..this chutney must be yum ..getting the flavours after simmering awsy in juice. Very very nice.
