Jamaican Rice/ Rice and Peas

This beautiful mildly spiced rice is combined with kidney beans or green peas or cow peas. The taste is so good that you can easily have it on its own but the combinations are also very flavorful





Ingredients
1 cup soaked cow peas,fresh green peas or soaked kidney beans  (drain out the water before use)
2  cups Long grain rice (rinsed and drained)
4 cups Coconut milk (not very thick)
Water (approx 1-2/3 cups)
2 cloves Garlic, chopped
1 Small onion or 2 stalks fresh green onions finely chopped
1 tsp Pepper
1 tsp dried thyme
Salt, to taste

Method
1) Cook the lentils (for kidney beans and cow peas - pressure cook for geen peas simple add water and boil). Drain the water and use
2) Add all the ingredients in a large pot or rice cooker.
3) Cook until the liquid from coconut milk is used up or rice is cooked.
4) Use a fork to fluff up the rice.
Serve hot

I'm yet to try coming rice in coconut milk. I'm sure this would be big on flavours
