Honey Orange Almond Cake

This recipe was stuck in my head ever since I saw it on TV show. I made very minor changes to the main recipe. I made the then tweaked recipes 3 times , twice for our respective offices and then got repeat orders from Hubby's The fact that I used honey was good kick enough for my health conscious DH.

Ingredients
1.5 cups All purpose Flour
2 cups Honey
0.5 cups Almond Meal (Almonds ground coarsely)
2 cups Butter
3 large eggs
2 Oranges cut horizontally after zesting some
2 tbsp caster sugar
1 cup Orange Juice

Method
1) In a sauce pan, add the caster sugar and 1 tspn of water. Let it caramelise , do not stir until it starts turning amber. Switch off as soon as it does. 
2) Pour this at the base of the cake pan  (10 inch round pan works).
3) Place some slices of the orange slices to cover the base
4) In another bowl. mix the honey and butter and beat until it is well mixed
5) Add the eggs gradually to this and continue to beat. 
) Sift the flour, almond meal, baking powder, and baking soda.
7) Add this gradually to the honey mixture and ensure there are no lumps. Add the orange zest and mix again
8) Pour this batter in the prepared cake pan
9) Bake for 25 min at 180 C or until the centre of the cake comes clean
10) While the cake is baking, in another pan, heat the orange juice along with the remaining orange slices until it is reduce to 3/4.
11) Remove the cake from the tin and place on serving plate. Make holes while it is hot using a tooth pick. Pour the orange reduction and place the segments on top.

Serve hot or cold , this wont stay for long..

I like orange flavored cakes. I think my husband would not mind this honey cake either. As it is he is not big into desserts but he would not mind one with honey.
