Caldo Verde/ Potato Soup with Kale/ Spinach and vegetarian chorizo

Caldo Verde is a simple potato based soup which may come across as bland for the vegetarian version but so hearty. 

While eating it we added some vinegar and butter. Most of the soup was mopped using the corn bread which tasted yummy. 







Ingredients
3 large starchy potatoes peeled and finely chopped
1 medium red onion finely chopped
1 bunch of kale or spinach finely chopped ( I used baby spinach)
3 to 4 garlic cloves
2 tspn oil
salt and pepper to taste
for garnish and side servings
vegetarian chorizo finely sliced
Broa or other crusty bread

Method
1) In  pan, heat some oil, saute the garlic and onion until they are cooked and pink
2) Add the chopped potatoes and saute for a min
3) Add 4 cups of water and let it come to a boil
4) Using a handblender make a smooth puree in the pan
5) Add the chopped spinach, salt and pepper

Serve along with chorizo and Broa bread

Caldo verde looks delicious. I usually avoid potatoes in soups but after seeing so many soups with potatoes, I might give it a try.
The soup with butter sounds nice..potatoes n butter make a great combo.

the portuguese use kale a lot in their soups. Although I've had a few different portuguese soups never had this one and looks delicious to try
