Cachapa/ Venezuelan Pancake

Growing up Venezuela was a country that always won the beauty pageants. I learnt now that the country is also worthy of winning a pageant for the beautiful landscapes and beaches with blue sea
The cuisine has influence of spanish like all Latam countries but surprisingly also has culture similar to Italian food. They claim to be the second highest pasta eating country.
I picked a few dishes but could not find time to make many..the fact that they have corn in every dish I selected made my life easy as my lil one loves fresh sweet corn
Ingredients
2 cups sweet corn kernels
2 tbsp corn starch
salt to taste
Oil to cook
2 tbsp cheese
1) Grind the corn in a mixer to make a puree
2) Take this in a bowl, and add the corn starch and salt and mix well
3) Heat your griddle and brush some oil on the pan
4) Pour the corn batter about 2 inch thick. Cook on a side and then flip over
5) Sprinkle with grated cheese and serve hot
