Bulani/ Stuffed Paratha/ Afghani Paratha
Ingredients
for dough
2 cups flour
1 cup water
1 tspn oil
salt to taste
for fillings
Onion Filling
1 bunch of spring onions finely chopped
1 tspn red chilli powder
1 tbsp vegetable oil to bind
salt to taste
Potato Filling
2 cups mashed boiled potatoes
1 large onion finely chopped
1 tspn crushed garlic
1 tspn red chilli powder
1 tspn black pepper powder
1 tspn coriander powder
salt to taste
2 cups flour

1 large onion finely chopped
1 tspn crushed garlic
1 tspn red chilli powder
1 tspn black pepper powder
1 tspn coriander powder

Pumpkin Filling
1 cup grated pumpkin (peeled and deseeded)
1 onion finely chopped
1 tspn coriander cumin powder
2 to 3 cloves of garlic crushed
1 tbsp crushed walnuts
1 tspn red chilly powder
1 tspn black pepper crushed
1 tbsp vegetable oil to bind
salt to taste
Method
1) In a large basin, mix the flour, salt , oil and water to make a soft pliable dough, Set it aside for 20 min
2) Mix the ingredients for all the 3 fillings in 3 separate bowls. Mix each one very well
3) Make small balls of the dough and roll it out flat.
4) Place the filling on half of the rolled out dough and cover the other side on top. seal the edges to make a half moon shaped roti.
5) On a hot griddle roast the roti until it is cooked on each side. Use oil or butter to brush.
Repeat for different fillings.
Serve hot with garlic yogurt or korma of your choice
