Bouneschlupp/ Green Bean Soup/ Luxembourg soup
This is the country's national dish but the pictures do not do justice to the dish and I am sure people may get disillusioned.
But the taste is awesome. It has that homely feel and I enjoyed it as much as my soup loving husband.
You may pronounce bouneschlupp as you read ...end it with a slurpp..
It probably means green bean soup. I made the soup using french beans which are known as green beans there. Traditionally it is made with pieces of ham or bacon as topping but I had to do without it considering we dont eat. I did not miss a thing, but you may consider adding bread croutons which I feel would give the crunch we get from bacon strips my assumption
Ingredients
2 cups inch length chopped french beans (tails cut and threads removed)
1 large potato peeled and cubed
1 small onion finely chopped
1 tspn crushed garlic
1 tspn apf
1 tspn chives / fresh garlic
4 tbsp fresh sour cream/ thick curd
1 tspn oil
salt and pepper to taste
Method
1) In a pan, heat the oil, add the beans and potatoes and saute it.
2) Add chopped onions, flour and saute for a min. Add about 5 cups of water and let it cook until it comes to a simmer
3) Add garlic, chives, salt and pepper.
4) Remove and serve topped with fresh sour cream
