Vegetable Momos/ Northeastern special/ Sikkim Special

Today, we will explore the place called Sikkim. Most of the food used is similar to the neighbouring states however the most popular amongst it is the momo recipe. I have tried with different fillings earlier, this one is the simple plain filling which does not fail you in taste. I made a dip to go along with can also be used to pour on top along with roasted sesame seeds. Try it...





Ingredients
2 cups All purpose flour
1 tspn corn flour(optional)
1 cup water
salt to taste
for filling
1 cup grated cabbage
1 cup grated carrots
1 spring onion grated, greens roughly chopped
1 tspn soy sauce
1 tspn ginger garlic 
a tspn green chilli paste
1 tspn crushed black pepper
Method
1) In a bowl, mix all the ingredients for the dough, using little water at at time. Knead a soft pliable dough
2) In another bowl, mix all the ingredients for the filling. Gently pound it with a pestle to mix it really well. Also squeeze it after 10to 15 min to extract out all the water and let it stand
3) Pinch out really small balls of the dough and roll out as thin as possible flat puris using the dough. You should be able to see through the puris. Use flour if required
4) Place the filling in the centre.
5) You can now make various shapes for the momos of your choice.
6) Either like a modak, By cupping the dough in your palm, and making small pinches around the edge in circular fashion.
7) Or, simply fold over the rolled out puri, seal it, then pinch out in one direction to give it the shape seen in the pictures
8) Place these in steamer (idli steamer will do, grease it).
9) Steam it for 15 min.
10) Serve with chilly sauce or soy sauce dip (recipe below)



Soy Sauce Dip
1/2 cup water
1 tbsp dark soy sauce
1 tspn vinegar (white)
1 tspn red chilly sauce 
1 tspn sugar (brown tastes amazing)
1 tspn salt
1 tbsp orange juice (optional)
green onion chopped
Method
1) Mix all the ingredients in a bottle and shake vigorously

Wish i get that plate of momos rite now from my lappy screen, soo irresistible they are.
The momos have turned out really good. I love it when the stuffing peeks out through the semi transparent dough. Nice combo.
Pradnya the momos look excellent , and the transparency of the sheet how well the dough has been rolled, how ever I wish you had placed them apart , the pattern used would be more prominent..what do you say?
