Siddhu ghee/ Himachal breakfast
Last month, I came across a lady from himachal pradesh. She works in mumbai but her heart is in her homeland. Surprisingly she has stayed in mumbai since her birth and has been to himchal only during the key festivals. Her economic background does not let her enjoy the himachal pradesh trips as much as she would have liked but the longing is in her eyes always. I asked her what she likes about her native the most and she quickly said the weather and food. She told about the times when her mother (now nomore) made this healthy breakfast for her siblings before sending them off to work.
I picked the recipe to try and must say it took me by surprise. I suggest that folks who love steamed dumplings try this variety. My folks thoroughly enjoyed this...
Ingredients
for dough
1 cup flour
1/2 cup curd
1 tspn salt
for filling
1/2 cup boiled green peas
1 tspn soaked poppy seeds
1 medium onion paste
1 tspn ginger garlic paste
1 tspn green chilly paste
salt to taste
Clarified butter/ Ghee to cook
Method
1) Prepare the dough by mixing all ingredients. Keep aside
2) Grind the soaked poppy seeds mixture and green peas paste.
3) In a non stick pan, heat some ghee, add the onion paste. Saute it
4) Next add the ginger garlic paste and saute again
5) Now add the green peas mixture, salt and green chillies and cook till the mixture dries up
6) Saute until the mixture is dry and grainy in texture. Let it cool
7) Now, roll out small balls of the dough flat like a puri.
8) Place the green peas mixture and cover it up from sides to seal the filling
9) Now, repeat for the remaining dough
10) Steam the readied dumplings in a idli steamer or momo steamer until it is done. About 10 min
11) Remove them and let them stand for a min or 2
12) In a pan, heat 2 tbsp ghee.
13) Saute the dumplings in the ghee until they get blistered slightly
14) Serve hot with more ghee.

This is so delicious and will be perfect snack when there is nip in the air.
