Aloo Pitika/ Assamese side dish/ Mashed potato with ginger
Assam's version of mashed potatoes is delightfully simple yet flavorful recipe. The addition of mustard oil takes it to a different level. I came across a friend from assam who could survive on this recipe along with a bowl of rice for days together.It surprised me back then on the possibility of surviving on basic food. However, after having tasted it the way she ate, I realise it is almost similar to us preferring that dollop of ghee on hot steaming rice along with methkut (podi).
Ingredients
Boiled potatoes
1 tspn ginger
salt to taste
green chilly paste (optional)
mustard oil/ vegetable oil + mustard paste
Method
1) Mash the skinned and boiled potatoes until there are no lumps.
2) Add a teaspoon of oil and salt while the potatoes are still warm.
3) Add the ginger and green chillies paste and mash till you get a smooth pulp.
4) Scoop a spoonful of the mixture and serve with warm rice and curry or oambal
I topped it with some mustard and green chilly paste mixed in oil for added zing
