Veg Roll (Stuffed in cored bread roll)
This is a very easy to carry, like on the go recipe. My son's school is very early for breakfast and bit late for just a cup of milk to satiate his small spikes of hunger. Willingly or otherwise, I have ended up with an habit of feeding him on his way to school. Now since driving while feeding is a skill I do not want to learn, I have to think overtime on recipes that little fingers can hold on with a single hand (since the other hand is busy holding an alien or transformer.
Coming back to the recipe, it turned out to be surprisingly appreciated by one and all who tasted it.
Ingredients
2 Bread rolls
1 onion thinly slices
1 tomato julienned
1 capsicum julienned
1/2 cup crushed paneer
1/2 cup grated cheese
1 cup milk
1 tspn paprika (optional)
salt and pepper to taste
Oil to cook
Method
1) Cut the roll in half from the centre. Core out the internal carefully while ensuring that you do not break the bread
2) In a non stick pan, saute the onions in hot oil until they are translucent
3) Add the tomatoes, capsicum and saute it further
4) Next add milk, grated paneer and seasonings.
5) Now add the cored bread crumbles.
6) When this cools down, fill the stuffing in the cored breads. Seal the top with grated cheese.
7) Bake in a preheated oven for 8-10 min at 170 d
8) Cover the base with foil and eat on the go.
