Palak Corn Tikki stuffed with cheese
Last Kid's birthday, we ordered food from our local club and generally we went with the suggestions made by the restaurant. One of their appetiser was called as amritsari tikki. It was no way related to any amritsari style dish. It was the best food item on the list and all from kids to adults enjoyed it immensely.
I was happy to deconstruct the recipe and make it at home in healthier manner. Never mind in the bargain I tasted it a zillion times till date. But then, what I have ended up is a super winning recipe
Ingredients
1 cup fresh corn kernels
1 cup chopped fresh spinach leaves
2 medium sized boiled and mashed potatoes
1 tspn garam masala
1 tspn ginger garlic paste
1 tspn dry mango powder
1 tspn green chilly/ red chilli powder
2 tspn corn flour
4 cheese slices
2 tspn crushed corn flakes
salt to taste
Oil to shallow fry
Method
1) Boil the corn kernels and crush them using a mixie
2) In a large bowl, mix the corn kernels, fresh spinach, mashed potatoes, ginger garlic, garam masala, dry mango, chilli and salt.
3) Mash the mixture to form a nice dough. Use corn flour as needed to make the dough pliable
4) Now form small balls, about large lemon sized, create a depression in the centre.
5) Place 1/4th of the cheese slice in the centre and then cover it from all ends
6) Roll this patty in crushed cornflakes. Repeat for remaining dough
7) Use a nonstick pan and brush it with oil.
8) Place the patties and get them roasted until they are slightly golden.
Serve hot with tomato ketchup
