Rabri
Rabri has become a staple at home ever since the birth of my son. We seem to stock up so much of milk that either we make paneer or rabri. Rabri is liked by all at home. It is ofcourse fattening and hence better to go for smaller quantities
Ingredients
1 litre full fat milk
1/2 cup sugar
1 tspn elaichi powder
2 tspn pistachios
2 tspn almond slivers
Method
1) Boil the milk in a large pot, Once it boils, reduce the flame
2) Now cook the milk on slow flame till it is reduce to half.
3)Keep scraping the sides and add the milk leather back to the milk
4) When it is reduced to 1/3rd add the sugar, elaichi powder and nuts.
5) Continue to stir until the sugar is dissolved.
You can serve this hot or cold, garnished with some kesar strands
