Napolean Pasta / Neapolitan Pasta
When we are out of ideas on what to eat , while eating out , it is usually a toss up between chinese (for hubby's sake or italian for my sake. My son gets to decide the dessert which is usually an icecream.
Thinking about this makes me realise that I do prefer pastas over noodles - I am not too keen on eating a pizza outside home.
Also, I make pasta based salads pretty often for myself. It is easy to make and carry to work as well. This particular recipe is one of the many that I have been making recently.
Ingredients
1 onion finely chopped
1 tspn crushed garlic
2 tomatoes finely chopped
4 tomatoes pureed
1 sprig of fresh basil
1 tspn dried oregano (you may used fresh)
1 bay leaf
salt and pepper to taste
Olive Oil
Pasta of your choice (Usually sphagetti is used, i used Penne)
Method
1) Cook your pasta as per instructions and set aside
2) In a large nonstick pan, heat some oil, add the crushed garlic
3) Add the onions and saute till they are pink
4) Now add the tomatoes and the herbs
5) Add the tomato puree and let it simmer.
6) Add the seasonings and mix in the pasta or pour over the pasta
Serve it with some grated parmesan, chilly flakes etc
