Hyderabadi Biryani (Vegetarian)

I feel biryani works more for vegetarians than non vegetarians. All meat lovers scoop out the chunky meat pieces and then relish the rice separately. Whereas the vegetarians indeed get to relish it like it is meant to be...now that is how I feel.
So coming to today's recipe, biryani has always been prepared this way for me , it turns out to be the typical hyderabadi dum biryani recipe, so it is good.









Ingredients
2 cups Long grain rice (Basmati)
2 onions thinly sliced
1 tspn ginger garlic paste
2 medium sized tomatoes
1/2 cup  1 tbsp curd
2 cups mixed vegetables (cauliflower, carrots, french beans, capsicum, peas)
2 to 3 bay leaves
1 inch cinnamon
1 tspn cloves
1 tspn black pepper
1 mace
1 black cardamom
2 to 3 green cardamoms2 tspn red chillies 
1 tspn turmeric powder
salt to taste
2 tbsp oil
1 bunch of fresh mint leaves
1 tbsp cashews
Method
1) Cook the rice with 4 cups water,1 tspn curd and salt. Add a tspn of oil
2) In a large deep pan, heat some oil, add the whole garam masala. 
3) Add half of the onions. Saute till they are pink.
4) Add the tomatoes and saute further. Add red chilli, turmeric. 
5) Add all the vegetables and cover until cooked.
) Add the curd and salt and cook till the oil separates.
7) In another pan, heat oil for deep frying. Fry the cashews first until light golden, remove and then deep fry onions till crisp
8) In a big dish, grease the base, and make a layer of rice, top it with the cooked gravy. Sprinkle with hand crushed mint
9) Cover it with another layer of rice. Sprinkle the top with cashews, fried onions, and more mint.
10) Cover with lid and cook until there is enough steam  about 10 to 12 min.

Tips  Add a few tspn of ghee on top before covering with lid. You may also sprinkle with garam masala. For toppings, you can also add french fries, fried paneer cubes, brocolli

I like your choice of toppings..All of them are so yum! The biryanis you get in the local restaurants have lost their charm for me as they just use too much of masala. Now I am all into Hydrabadi dum biriyani and such :)..
