Apple Pie

A for Apple, is what I learnt - I think you did too....as the first word, and it is only fair for me to kick off with Apple pie ,the ABC series - yes...series of 26 posts under various themes...but in the alphabetical order...So for now..A is for Apple Pie. Apple Pie is basically a very simple recipe and really something that most Indian houses should attempt for dinner parties hosted during chilly winter nights.

It is actually a bit like apple crumble in taste, but this is much more softer and mushier in the centre. It is best served with vanilla icecream.

Ingredients
for base
2 cup APF/ Maida
1 cup softened butter
 1/2 cup chilled water

for filling
5 large apples - peeled and cored
1 cup sugar (you may reduce or increase based on your taste)
1 tspn lemon juice
1 tspn cinnamon powder

Method
1) For the dough, in a large bowl, rub the butter with the flour with the tips of your finger slowly. Do this until the flour and butter are well mixed and resemble a crumbly mixture.
2) Add chilled water a spoonful at a time to slowly gather the crumbs together and form a stiff uneven dough. Add more water if required, if it the dough is not binding together at all. Else, cover the dough with a cling film and chill for 20-30 min.
3) In another deep non stick pan, add the apples, sugar and lemon juice, cinnamon powder along with some water (just enough to mix). Put on medium flame and let it cook till the apples are cooked.
4) Preheat the oven at 220c for few minutes.
5) Divide the dough in two parts, one slightly bigger than the other.
6) Roll out the bigger ball of dough in a thin roll.
7) Grease a flan tin or pie tin. Place the rolled out dough on the greased tin.  Lightly press the edges to neatly fit the dough.
8) Using a fork make slight holes in the rolled out dough.
9) Roll out the other ball of the dough. Make a pattern as per your choice. Weavers basket or small holes.
10) Pour the apple mixture evenly spread it out
11) Place the patterned/ textured top. Seal the edges well.
12) Bake this pie for 30 min or until the dough is well cooked.

Serve hot or cold either with vanilla icecream or warm custard respectively

Another pattern that you could use.

Pradnya, would you believe it, I too planned Apple pie for A, but pulled it out at the last moment becasue I was wondering if many pies had already been posted in last month's pie theme! I made one typical lattice version and cut out some hearts and clovers in the second one. But I simply love your holes. Looks so cute and kid-friendly. This is surely going to be my next pie cover :)
