Open Faced Sandwich (Italian)
Personally open faced sandwiches do not appeal me as much for a reason that my head has a setting that looks and expects sandwiches to be a stuffing between two slices of bread. However with my little one, I have learnt the more he sees the stuffing the better he eats. So open faced sandwiches are usually the order of most days that I am early at home, for his evening snacks.
With his cartoon network and pogo hangover, usually all the stuffings get unusual analogy the olives are called as tyres and paneer is some "buti" and red stuffing usually gets called out for blood.
Well, as long as it all lands up in his belly I am happy and smiling
Ingredients
Bread slices (4)
1 cup chopped spinach
1/2 cup crushed paneer
1 block of paneer (sliced horizontally in thini slices)
butter (optional)
toppings of your choice (Olives, corn, cheese)
salt and pepper to taste
for sauce
1 cup tomato puree (4 tomatoes)
1 sprig of fresh basil
salt and paprika to taste
1 tspn oil
Method
1) In a broad pan, heat some oil, add the tomato puree, salt and paprika. Let it cook till the tomatoes lose the raw smell and reduce to half. Add the crushed basil leaves in the end and set aside
2)Toast your bread slices slightly
3) In a pan or grill, also toast your paneer slices
4) Now to assemble the sandwich, place the bread slice on the plate, apply butter, tomato sauce, place the grilled paneer slice, spinach, crushed paneer and other toppings.
5)Sprinkle with salt and pepper.
Serve with chips or sauce or your choice
