Paneer Frankie/ Paneer Roll
My earliest memory of Frankie – the name it is popular in
Mumbai, was from my junior college days. In the heart of bandra,
where I believe TIBBs started their first business, I used to enjoy our Frankie
roll with my gang of girls. We were 8 of us who met for a brief period of 2
years. Money was scarce and eating a Frankie roll was definitely indulgence and
rare. We bunked our practicals once a month and stole some moments to wander the
streets of bandra. I still associate those days with a lot of fun moments. I
tried recreating the Frankie roll many times at home and was successful many
times. The recipe which I plan to share today is not the regular recipe but an
adaptation and improvisation based on hubby’s likings.
