Onion Rice - Sindhi Style/ Bhuga Chawar/ Bhuga Chawal

I am so glad to have picked the sindhi cuisine theme for blogging. I had an array of recipes to select from and all were equally tempting. It takes back me to the wonderful memories I shared with my first corporate colleague who has become a good friend. She introduced me this cuisine and shared some delicious dishes made by by her mom daily. She was so immensely proud about her community and food and all things typically sindhi that helped me understand the zest for life which most sindhis share. All people from the community that I have met - including our kitchen queen Vaishali, have made me realize one thing that they love their food and celebrate it. And it is rightly so....
I can go on and on about this ...today's recipe is a simple and very tasty recipe.


Ingredients
1 cup basmati long grained rice
2 medium onions finely chopped
2 tspn clarified butter/ ghee
1 bay leaf
1/2 tspn black pepper whole
1/2 tspn  cloves
1/2 inch cinnamon stick
1 cardamom
salt to taste
Method
1) Wash the rice under tap water and set aside
2) In a pan, heat ghee or oil.
3) Add the chopped onions. Saute it on low flame for 8-10 min until it caramelizes
4) Next add the rice and all the masalas
5) Add salt and 2 cups of water
6) Cover the lid and let it cook until the rice is done. About 10 min
7) Serve with onion raita or sayee bhaji or kadhi
