Ultimate Chocolate Cake
There is no end finding the ultimate chocolate cake recipes. So before getting down to your actual recipe, let me tell you what is a chocolate cake that can be termed as ultimate - by my standards.
Here is my definition
- The cake has to taste of chocolate and nothing else. The chocolate should taste slightly bitter, less milky and very less sugar laden
- The cake should be crumbly from within.
- The cake should be moist naturally (no need of gylcerin, sugar syrups, juices or icing)
- The cake should be spongy and bouncy
- The icing should complement it beautifully not being to sweet nor too dry
I found that recipe - trust me and if you dont want to, try making it...
Ingredients
2 cups Cake Flour/ All purpose flour
2 cups caster sugar
3/4 cup Dark Cocoa Powder (Use a nice brand)
2 tspn baking soda
1 tspn baking powder
2 large eggs
1/2 cup yogurt
1 cup canola oil
1 cup dark coffee (boiling hot)
For Icing
40 gm butter
100 gm Icing Sugar
1 tspn Cocoa powder
Method
1) Mix int flour, cocoa powder, baking soda and baking powder and sift it together
2) In another bowl, beat the eggs, oil, yogurt and sugar together.
3) Add the flour mixture little at a time, mix well
4) Slowly add boiling coffee to the mixture and mix well
5) Grease a 12 inch round tin and line with parchment or wax paper
6) Preheat the oven at 175 c for 5 min
7) Pour the mixture in the tin and place in the oven. Let it cook till 40 - 45 min
8) Check with a spaghetti or toothpick in the middle. If done, remove and let it cook on wire frame
9) Make the icing by beating butter and folding in sugar and cocoa powder.
10)Cool and cover with chocolate icing.
