Thecha/ Kharda/ Green chilly quick chutney
Thecha is a spicy chutney which is freshly ground normally. In marathi, "thechne" means pounding, this reasons the name of the chutney. It is also popularly known as kharda, guess means the same. Whatever is the history about the naming ceremony, this is yummy and must have with bhakri.
Commercially you will easily find the one with red chilli that stays for long, however, at home it is made using fresh green chillies. Different parts of the state add different ingredients.
Whenever you decide to visit maharashtra and do that via road, I urge you to try the bhakris and thecha in different parts, it is an exploration on its own.
Ingredients
5-6 green chillies
4-5 garlic cloves
1 tspn oil
few sprigs of coriander
salt to taste
a tspn lemon juice (optional)
Method
1) In a pan, heat oil and fry the green chillies until the skin gets blistered
2) Now in a mortar, pound the garlic, green chillies, coriander along salt.
3) The chutney should be coarsely ground.
4) Add lemon juice if you want and serve
