Tender Coconut Guacamole dip

Summer is perfect season to make tender coconut recipes. It is refreshing and soothing. Some time back, I had some home made tortilla chips which I wanted to pair with some dip. I made a cheese based dip but that did not go down well with the folks at home. That is when I made this guacamole with tender coconut and trust me, there was no difference noted in terms of taste. It is deliciously creamy in texture and much more economical.
The only issues is that the color starts getting dull with time. So do not look at it as an option for make ahead dip. It is quick to make, so whip up at last minute. For the seasonal theme , this is my 6th recipe 



Ingredients
1 cup tender coconut flesh
1 onion roughly chopped
1 tomato roughly chopped
2-3 garlic cloves
1 green chilli
1 sprig of cirander leaves
juice of 1 lemon 
1 tspn Olive Oil
salt to taste

Method
1) Grind together all the ingredients using oil
2) Add salt to taste

Serve with tortilla or potato chips.
