Flavored Gola/ Crushed Ice Candy
If you have been to juhu chowpatty in mumbai, you probably have heard about few things related to food associated and strongly recommended by one and all.. It is usually the pav bhaji or chat or the paan. One another thing highly recommended is the "gola" or crushed ice candy. Over the years the humble gola has metamorphized from simple ice and water based flavors to rich creamy condensed milk, internationally acclaimed toppings like blueberry crush and what not...
Having mom in tow meant that as a kid we never had the chance to eat the golas. She continues to watch where and what we eat to date, but things have changed a bit for me. Post marriage, I realized that dear hubby had similar fascinations but much more uncontrolled than mine. He believes to let go once in a while and pushes me to let the little one try everything at the cost of falling sick. One such request came for the gola party. Apparently, they promised each other to celebrate with gola after the mumbai indians victory.
As the match started progressing, I realized that it may well turn into reality. Considering there is few weeks of schooling still left for son, my fears led me into panic. One phone with mom, to reassure my fears are right, turned out to be a boon. She suggested, making it at home. Having tried and failed to amuse I was unsure. But she edged me, saying add a pinch of citric acid and you will get the right texture without the mess.

Here comes the super hygienic home made gola recipe
Ingredients (to make 4 golas)
4 tbsp sugar
2 tspn citric acid
salt to taste
for topping
1 lemon's juice
rock salt
chat masala
edible food color
Fruit crush or concentrate
Method
1) In a shallow pan, mix the sugar with water and cook it to form a thick consistency sugar syrup - like we make for gulab jamuns. Remove from pan.
3) To this syrup, add water- about 4 cups, along with citric acid. Keep stirring until it is well mixed.
4) Now add the topping to your taste and keep stirring. You can also add the topping later when the gola is set
5) In a cup, pour this mixture and insert a stick / spoon in the centre. To hold its position, you can place a slitted lid or card paper and then insert the stick
6) Now place this in the coolest section of your refrigerator.
7) After 2-3 hours, remove and serve the cup or remove from the by slightly immersing the cup in water at room temperature.
8) Serve this along with the toppings to add for more fun
