Cottage Cheese Fingers/ Paneer Fingers
Paneer was unknown to me up and until my teenage days. I dont know whether it existed before that but in my world when it did I was hooked onto it big time. I can never stop experimenting with it. Cut to the millenial's they probably think paneer is one of the vegetables with the amount of recipes available. Considering this, I feel making paneer based finger food always works with kids
As part of the birthday series, presenting a simple and yummy dish as snack for birthday party or otherwise
Ingredients
200 gms fresh paneer/ cottage cheese
2 tspn cayenne pepper/ red chilli powder / paprika
2 tspn lemon juice
2 tspn corn flour
2 tbsp bread crumbs
salt to taste
Oil to cook
Method
1) Cut the paneer in finger size pieces
2) Add salt, chilli powder, lemon juice and set aside
3) Make a slurry using the corn flour
4) After 10 min, take the marinated paneer fingers and coat them in corn flour slurry
5) Next dip them in crumbs and coat them all over, repeat for all paneer pieces
6) In a non stick pan, heat 2 tspn of oil
7) Place the paneer fingers and cook them on each side until it is nice and crispy
Serve with choice of sauce or chutney

I love the texture of breadcrumbs on the paneer. well done
BTW, my daughter is the opposite. She refuses to believe that paneer is also a kind of cheese.:)
