Amrakhand/ Mango Shrikhand
Kid asked, for holi we make puranpoli, what do we do on gudi padwa, btw Happy Gudi Padwa or simply put Happy New Year.
I asked my mother and she said," dont bother I am making puranpolis and kheer. I will ask your father to bring some shrikhand. I have few other sweets which will make the traditional 5 sweet fare complete"
I took cue and thought, if not that elaborate, let me atleast make one sweet at home. This is how this lovely shrikhand or amrakhand as it is called because of the mango pulp in it came alive
Traditionally this is made and eaten round the year and probably a must have for most maharashtrian families. Under the theme of traditional recipes,for BM, this fits the perfect bill..
Ingredients
2 cups thick yogurt ( I used nestle)
1 mango's pulp
1/2 cup sugar
2 tbsp crushed nuts (optional)
a pinch of saffron/kesar( optional)
a pinch of cardamom powder
Method
1) Tie the curd in muslin cloth and hang it overnight to drain all the water. I keep it in refrigerator
2)In a bowl, mix the sugar and mango pulp until sugar is completely dissolved
3) Add to this the hung curd (water discarded) and mix with a fork.
4) Add the cardamom powder, kesar and crushed nuts and mix well
5) Chill for about an hour to let the flavors mix in well
6) Serve as a dessert or with puris
