Cucumber salad with coriander and walnut dressing

During autumn, just before the so called winter in mumbai, I stocked up lot of cucumber daily. Mostly as fresh salads I enjoyed the crunchy, juicy , almost seedless version of the cucumbers. It is strange how suddenly in a month's time, the texture and crunch both disappear from the veggie.
Since it was not going to taste good in the regular raita form, I decided to keep large chunks of it and simply lace it with some wintery flavors




Ingredients
3 cucumbers peeled/ chopped in cubes
1 bunch of fresh coriander
1 tbsp walnuts
1/2 bunch of Green Garlic (use 2-3 cloves of dried otherwise)
2 green chillies
1 tspn sugar
juice of 1 lemon
salt to taste
Method
1) Grind all the ingredients except cucumber to form smooth paste. Use little water
2) Pour this mixture on the cucumber cubes and serve chilled

I bet the addition of garlic and sugar makes this salad a different one than the version we are accustomed to.
