Vegetable Salad Sandwich
I also call this as survival sandwich....for it was made by a friend when we were staying away from home studying and prepping for our exams in my early college days...Although we stayed for a few months to combat the initial hurdles of engineering days, I hold very fond memories of those days. A friend of mine used to prepare this delicious sandwich stuffing. The best part of this stuffing is that it tastes better when you keep longer ..so is perfect for office snack or tiffin.
For the 3rd day of BM 21, I wish to share this easy peasy yet delicious sandwich recipe
Ingredients
1 onion finely chopped
2 tomatoes finely chopped
2 tbspn chopped fresh coriander leaves
1 tspn lemon juice
1 green chilly finely chopped
salt to taste
a pinch of sugar (optional - only use if the onion is pungent or tomato is tart)
cheese spread (as much as you like)
Butter to spread on the bread slices
Bread (white or brown)
for chutney
1/2 cup mint leaves
1/4 cup coriander leaves
1 green chilli
2-3 garlic flakes
salt to taste
Method
1) Toast the bread slices on a griddle or a toaster. Spread butter before or after toasting
2) Grind the chutney ingredients
3) Mix all the chopped vegetables in a bowl
4) For the sandwich, spread cheese spread on slice and chutney on the other
5) Spoon the mixture on one of the slice and cover with other
6) Cut in triangle and serve with your choice of chutney or ketchup
