Methi Dosa/ Fenugreek Rice pancakes

I had heard about the menthya dosa many times, but got around trying only this time. It is nice and delicious and pretty straight forward to make.




Ingredients
2 cups Idli rawa (or rice) soaked for 8-10 hrs
1 cup chopped fresh fenugreek leaves (washed and cleaned well)
1/2 cup grated fresh coconut
1 green chilli (or more)
1/2 tspn fenugreek seeds (soaked along with the idli rawa)
1/2 cup curd 
salt to taste
Oli or butter to brush the pan (if not using a non stick pan)
Method
1) Grind the rice along with all the other ingredients using only curd.Add water only if required. 
2) Let is stand for another couple of hours. If it is too hot or humid, keep in fridge
3) Now on a non stick pan start pouring the batter and spread it using the back of the spoon to form a round dosa
4) Cover the pan with lid
5) After 2-3 min, lift the lid and using a spatula toss over
6) Brush some butter at this stage
7) Repeat for the remaining batter

This delicious and healthy dosa is ready to be served. You can serve with your usual dosa accompaniments
