Chocolate pudding (eggless)
I personally am not a huge fan of chocolate pudding. The texture of pudding and chocolate done seem to work for me often. I was wondering how would my little one react to one, as DH is completely off when it comes to chocolate based desserts.
When I opted for chocolate based recipes for kid's during this month's Blogging Marathon I wanted to try something unusual with chocolate. So I decided to try out the pudding, and for a change also decided to skip the oven and microwave.
This way of making pudding is classic English style to yield slightly softer pudding as against the regular (American version) which is slightly crunchier around the edges.
Ingredients
1 cup Full fat milk (at room temp)
1/2 cup fresh cream
1/4 cup corn starch
2 tbsp cocoa powder
1 tspn butter (optional)
3/4 cup sugar
1 tspn icing sugar (for dusting)
Method
1) In a bowl, mix the corn starch and cocoa powder.
2) Add the milk slowly stirring constantly.
3) Next add the sugar, butter and cream and mix well. Ensure there are no lumps
4) Now heat this mixture for 5-8 min until it starts sticking to the back of the spoon. Keep whisking throughout.
5) Wet the serving glasses or bowls, pur the mixture in it
6) Let it set in refrigerator for 30 min
7) Serve with some icing sugar dusted on top.
Tips- If there are lumps, add water and dilute it then pass through a sieve using a spoon.
My little one flatly rejected this as he said, it was too soft , guess he was expecting cake or chocolate. But I got two thumbs up from DH which was surprising...
