Savoiardi Biscuits / Sponge Fingers (Eggless)

Spong fingers, ladies fingers or savoiardi biscuits as they are known are not available in Mumbai is my conclusion. Unless someone tells me where I can find the super crunchy on outside, but soft like a cake within biscuits available in mumbai.
Tired of asking friends all over to keep sending me the packets I decided to give it a go and make one at home myself.
The fact that baking with eggs seems like a hassle and DH does not prefer the eggy smell in kitchen I had to fall back on eggless recipes.
This one was pure experimental. The only thing I would do differently next time is to add little more flour and use a piping bag (lazy me). But let me assure you, that the taste was no compromise whatsoever.




Ingredients
1 cups Cake flour
1 cup sour curd
1 cup icing sugar
1 tspn vanilla essence
1/2 cup butter
Method
1) Cream the butter and curd together
2) Add the Icing sugar and continue beating till the mixture starts holding shape.
3) Now add the vanilla essence 
4) Add the flour one tbsp at a time. Using a spatula fold it in the mixture. Do not over whip at this stage
5) Preheat the oven at lowest temperature possible
6) On a lined baking sheet, pipe out the biscuits in longish shape. I used a spoon and tried shaping it, which ended up flattening them.
7) Bake in the oven for 8-10 min. Keep a watch. They should not be very crunchy in the middle.
8) Sprinkle icing sugar on top or simply dunk in coffee and enjoy

Wonderful! I'm waiting to try this tomoro, but since i don't have cake flour, i'm going to have to look for some substitution online. Wish me luck :)
