Rava Idli (Instant)

Some recipes that I give credit to my mom are not even known to her. Like this one. She often used to pack ready made upma mix for me when I traveled for work. Some times, when I was tired of making dinner the upma mix was used to make idlis and even dosa at times
This is how I started making this instant idli mix at home. This has stayed with me ever since.
This is like one power packed meal

Ingredients
2 cups Semolina
1.5 cups of sour curds (add more if batter seems thicker)

1 finely chopped carrots (optional)
¼ cup finely chopped French beans (optional)
1 medium onion finely chopped (optional)
1 tbsp finely chopped coriander
½ tspn turmeric
1 tbsp cashew nuts
½ tspn baking soda
2 tbsp coriander leaves
2 finely chopped green chillies
1 tspn mustard seeds
1 tspn Split black lentil + Split Bengal Gram (Urad+Chana) (soaked in water)
sprig of curry leaves
2 tspn vegetable oil
Salt to taste
Method
1)In a pan or wok, add a spoonful of ghee and semolina. Roast it till the time there is no raw smell to the semolina. It may turn pink- golden in color. Let it stand
2) In the pan, add oil, mustard seeds. Let the seeds splutter
3)Next add the soaked lentil and dal. Saute it
4) Add the crushed curry leaves, turmeric powder, onion, french beans, cashew nuts , green chillies and saute for 5 min
5) Add the chopped carrots and stir again
6) Add this to the semolina and mix well
7) Beat the curd well and add it to the semolina mixture
8) Add more water if required (about 1/2 to 3/4 cup)
9) Add salt to taste. 
10) Grease the idli tray and prepare it for cooking
11) Just before adding the batter to the idli tray, mix the baking soda to the batter and mix gently
12) Cook the idlis in the steamer for 18 min (1st batch) and 15 min for later.
13) Serve hot with coconut chutney

This is one of my hubby's favorite, though its been sometime since I made it. They are super easy to make and quite filling for the tummy too!
