Cheese, & Jalapeno Stuffed Paratha
Most evening meals have to be in jiffy for me. Making one pot meals is the call for most days..which usually consists of various rice dishes cooked with a medley of vegetables and lentils.
Then there are days when little one categorically says no rice for me. He asks for what most people his generation think of as staple food despite being indian- pizza or sandwich or burgers.
This is when I spend time in thinking rather than cooking. This pizza topping stuffed paratha was one such evening meals
Ingredients
2 cups whole wheat flour
1 cup grated paneer
1 cup soft cheese (feta/ gouda / mozarella / grated cheddar)
1/2 cup chopped vegetables (onions, tomatoes, capsicum)
2 tbsp jalapenos (pickled)
1 tspn chilli flakes
1 tspn mixed seasonings (rosemary, basil, oregano)
salt to taste
Oil to cook
Method
1) In a large bowl, add the grated paneer, cheese, chopped vegetables, jalapenos,seasonings, chilli flakes and salt as needed. Mix it well
2) In another bowl, take the wheat flour, salt and a tspn of oil. Using water as required, knead well to make a soft dough
3) Pinch out small balls of the dough. Make equal portions of the stuffing
4) Roll out the dough, pack the stuffing and roll up from all sides
5) Now flatten the stuff dough and roll it out gently using some flour
6) On a hot griddle, roast the rolled out paratha using oil as needed.
Serve with tomato sauce
