Bread Pakoda
Monsoon is about sinful indulgence and sincerely think the junk goodies prosper the most during this season.
When it is raining heavily - the typical mumbai style rain you should do this...quickly make some deep fried goodies, serve along with a spicy chutney and pack yourself in a bundle with the plate by the window. It is simply amazing.
Ingredients (for 10 pakodas)
10 slices of bread (I used white bread)
4 medium size potatoes
3 green chillies finely chopped or crushed
1 tspn mustard seeds
1/2 tspn turmeric powder
few sprigs of curry leaves finely chopped
2 tbsp chopped fresh coriander leaves
1 cup Chickpea flour/ Besan
salt to taste
Oil for frying + 2 tspn
Method
1) In a bowl, prepare the batter, with chickpea flour, salt, a pinch of turmeric and 1/2 cup water. Let it stand until you prepare the fillings.
2) Boil the potatoes, peel and mash them.
3) In a small pan, heat 2 tspn of oil.
4) Add the mustard seeds, asafoetida. Let the seeds crackle
5) Add the curry leaves, green chillies and turmeric.
6) Pour this tempering on the potato mash. Mix well along with salt and chopped coriander
7) Take a slice of bread, cut it in half.
8) On one half. spread the potato filling.
9) Cover it with the other slice. Similarly repeat for the remaining slices
10) Heat oil in a large wok till it is sufficiently hot.
11) Dip the prepared bread sandwich in the chickpea batter till it is well coated from both sides
12) Drop them in oil and fry till they are golden and crispy.
13) Serve hot with chutney of your choice
