Subway style sandwich
So subway sandwiches are famous all over the world for its fresh vegetables stuffed in soft crusty bread and the array of sauce toppings. Despite the ease of access to them these days I often make them at home. One because I can decide on the toppings and sauces - we do that at sub's too right? Well then maybe because I can have them any time - Sub is asking why cant I still order for one at home Umm , maybe because I like my sub style better than yours?
Whatever the reason for you to make then at home...do try this at home for the hot sunny afternoon or for the moment you wish to feed healthy food to your little one.
Ingredients
2 loaf of crusty bread ( I used focaccia bread)
1 tomato thinly sliced
1 cucumber peeled and sliced
1/2 cup fresh blanched spinach (Optional)
1 cup fresh finely sliced iceberg lettuce
1 capsicum thinly sliced
2 tbsp chopped Jalapenos (skip for kids)
any other vegetable of your choice
2 slices of cheese
2 tbsp Mustard sauce (Optional)
2 tbsp Cream cheese + ground fresh smoked red chillies (to replicate the southwest sauce)
2 tbsp Mayonnaise
2 tbsp Tomato Ketchup
2 tbsp Sweet Onion Sauce (optional - recipe to be posted soon)
Method
1) Slit the bread loaf in the middle. Place the cheese slices such that it covers the base and prevents it from being soggy
2) Stuff the lettuce as much as you can.
3) Add the remaining vegetables as per your liking
4) Add the sauces and tightly cover.
Gobble down or Carry it to the playground wrapped neatly in foil paper so that your kid can eat it on the go and continue playing.
Kids can easily digest the fats as compared to grown ups. So do not compromise on butter or mayo for them as it meets their growing needs. These kind of sandwiches help you deliver some nutritional salads under the
