Onion Rings (Baked)

When you are in foreign land and missing your home terribly, the last thing on your mind is to appreciate someone else's food or culture. It is sort of an ironic situation...if the food or weather or the land is good why would you ever miss your home. The onion rings happened to me on one such day. I was slogging late night at work when a very senior colleague who also happened to be my boss for the being...suggested eating onion rings for dinner. 12 AM, midnight in the US of A , mentally I was in my heartland mumbai thinking of the wonderful breakfast or lunch or maybe brunch that was getting prepared in my mom's kitchen and someone had the audacity to suggest that we skip dinner as the time had anyway past for it and eat onion rings. OMG...I realized how much I hated them back then only for a while. The moment the lady with a good intention decided to take pains of driving down to the nearest pub she knew to pack me a packet of onion rings, I prayed that she never gets them and out of sheer hunger she lets me call it a day at work.
When she returned back with a large packet (American large) of onion rings and 12 onces of coca cola...I knew there were a minimum 2-3 hours of worth labor left before she let me go home. My hands seemed more greedy than the tummy, which immediately reached out for the onion rings and never seemed to stop until I ate the last crumble left.
Before you think I was being slaved by the task master, we were merely doing our jobs. She was diligently waiting for me to finish off the last pieces of code so that she could drop me off to the hotel. As much as I hated her during the day, I loved the way she cared. I think with women it comes naturally..the motherly instinct. 
So my affair with onion rings is pretty dated. When Nupur threw the challenge of making the onion rings non fried, I was pretty sure that they will never match the crunchiness of the deep fried golden rings. I surprised myself with the recipe.
Ingredients (20 rings)
2 medium sized onions chopped horizontally (about 1/2 inch width)
2 tbsp corn flour
1 tspn salt
1 tspn chilly powder
1 tspn dry mango powder
2 tbsp brown bread crumbs
1 tspn oil
Method
1) Separate the onions in rings. 
2) Make a thick slurry of the corn flour by mixing it in 2-3 tbsp water. Add more water as you go to dilute
3) In another bowl, mix the bread crumbs, chilli powder, salt, mango powder and set aside
4)Dip each onion ring in the corn flour and then in the bread crumb mixture.
5) Keep repeating till the onion ring is very well coated with the bread crumb mixture  (a little messy) 
6) Repeat for all the rings.
7) Place them on a baking sheet. Brush the top with oil.
8) Bake in a preheated oven at 220c for 10-12 min

Yummy and super crunchy onion rings are ready

A favorite movie - time snack. I haven't tried homemade versions though. It is time, I try. This looks yummy!
