Punjabi style thali/ Indian meal menu
When my SIL visited us last month, she brought loads of stuff...remember the Zaatar. Yeast (rapid rise, instant, no smell, long lasting types), Sumac, and other masalas also followed. During discussions we planned an impromptu lunch at MIL's place. We did not realize when the small get-together turned into a mega lunch event. We probably had 15 people turned out for lunch.

I have made non yeast bhature and enjoyed them a lot. But ever since I have made these I am sort of hooked to the yeast based bhatura

Chhole
There are many ways to make chhole.Popular recipes are amritsari chhole, pindi chhole. chana masala. A few key spices mixed and moved will give you the variations. The key ingredient is the souring agent. Tomato, dry mango powder or curd can decide the texture and color of the gravy.
Paneer Matar
This smooth tomato based gravy is slightly tangy and smells more of the spices than the chilli. Perfectly supports the chhole and bhature to give the required balance.
Ingredients
1 cup paneer cubes
1 medium onion finely chopped
2 medium tomatoes (deseeded and pureed)
1/2 cup green peas
1 tspn red chilli powder
1 tspn turmeric powder
1 tspn garam masala powder
1 tspn coriander cumin seeds powder
1 tspn curd
2 tbsp Oil
salt to taste
Method
1) In a frying pan, heat the oil.
2) Saute the onions till they are pink in color
3) Add the tomato puree and saute till the color changes.
4)Add all the masalas and saute further.
5)Add the green peas and let it cook
6)Add the curd and paneer and close the pan with a lid
7)Let it simmer
9) Add salt and garnish

This recipe is from my elder sister. And this is such a winner. The regular kachumer or raita becomes extra special.
Ingredients
2 cucumber chopped (almost slaughtered)
1 cup thick curd(hung curd would do)
1 tspn salt
1 tspn finely chopped green chillies
1 tspn coriander finely chopped
Method
1) Mix the curd , chillies and coriander and form a paste
2) Add salt to cucumber and let it sweat. Remove the water and add the cucumber to the curd.
3) Mix well

The simplest yet my most bankable rice recipe. I will post this soon.
